Quick Pickled Radishes

I was looking for a fast way to preserve some radishes from our CSA before we left for vacation and Marisa’s recipe came to the rescue. For good measure, I threw the roasted beets we hadn’t had a chance to eat in the mix too (and substituted Kosher salt for pickling salt). Both radishes and beets tasted divine.
